Time: 15 minutes
Serves: 2 (or one very hungry person!)
Ingredients:

1 block of firm silken tofu (12-14 oz.)

1/4 teaspoon of turmeric

generous shake of nutritional yeast

salt and pepper, to taste
Directions:

Heat oil or water, over a medium-hot pan.

Gently mash tofu block to create a “scrambled egg” consistency. Chunks should be slightly larger than your preference, as ingredients are mixed in they will break down further.

After tofu browns (5-6 minutes), add spice and seasoning. If you want to add extras like meatless crumbles or vegetables, now is the time to so.

Serve when the scramble is mixed and heated to your liking. The great thing about tofu scrambles, in comparison to traditional scrambles with chickens’ eggs, is that it is safe to eat at any point and won’t go bad quickly, so this is a great meal prep option!
