Protein-Packed Waffles

Serves: 6 (can easily be refrigerated or frozen for later)

Ingredients:

  • 2 cups almond milk

  • 1 tablespoon flax seed

  • 3 tablespoons water

  • 1/2 cup French Vanilla Vega All-in-One protein powder

  • 2 cups flour

  • 1/2 banana, blended

  • 1 tablespoon sugar or agave

  • 2 tablespoon coconut oil

Directions:

  1. Make an “egg” with by combining water with flax seed. Set aside for 3 minutes to thicken.

  2. Mix dry ingredients, slowly combining flaxseed egg, plant milk, banana, sweetener.

  3. Preheat waffle iron, lightly greasing groves with coconut oil. Cook waffles per appliance instruction (mini waffle irons like the one I have rarely take longer than 3 minutes for each side).

  4. Serve with maple syrup, fruit, nut butter, or other toppings. Target just started selling non-dairy Reddi-Wip, which I highly recommend.
