Serves: 2.5 servings
Ingredients:
- 1 cup sweet potato, peeled and diced
- 1 flax egg (1 tablespoon ground flax combined with 2 tablespoon water)
- 3/4 cup coconut flour
- 2 tbsp tapioca flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
1/2 teaspoon garlic
- 1/2 teaspoon paprika
- water (as necessary)
Directions:
- Bake a small sweet potato (diced so it cooks faster) in the oven for 10-15 at 375°. Once it is cooked and cooled, mash with a fork or potato masher
- Prepare the flax egg by combining one tablespoon of ground flax with 2 tablespoon water. Stir and set aside.
Combine all dry ingredients, gradually adding sweet potato and flax egg. Knead together with your hands, you may need to add a tablespoon or two of water to better bind the ingredients
Form the newly-formed dough into a ball, then roll and flatten to a medium-sized pizza crust (a little less than 12 inches in diameter). I used parchment paper to flip over the dough and flatten both sides. Keep in mind the dough will not rise or expand much in the oven, so shape it to the desired final size
- Top with the sauces and other toppings of your choice. Vegan cheese, peppers, greens, mock meats, and salsa would all taste delicious!
- Return pizza to the oven for approximately 10 minutes. If you like a crispy ‘za, keep it in for up to 15 minutes.
