Vegan Crunchwrap Supreme

While Taco Bell has some decent plant-based options for a mainstream fast food restaurant, their Crunchwrap Supreme is not one of them. With beef, nacho cheese, and sour cream in the original, I wanted to make a vegan copycat recipe that was healthier, vegan-friendly, but still delicious.

This Vegan Crunchwrap Supreme Taco Bell Recipe is

air-fried

I used my trusty Ninja Foodi Air Fryer to make the outside crunchy while leaving the inside perfectly soft. If you don’t have an air fryer, you can either bake it in the oven at 375˚ for 10 to 15 minutes, or grill it on a skillet. Either way, using a touch of oil will prevent sticking and make the edges nicely crisp.

  • Sub mock meat for ground beef: Gardein is one of my favorite mock meat brands, if you want a super filling and realistic Vegan Crunchwrap Supreme spring for Beyond Meat Crumbles
  • Replace vegan cheese or nutritional yeast for nacho cheese: If you don’t have nooch either my Sweet Potato Queso or Five-Minute Queso recipe would work as well
  • Use guacamole instead of sour cream: Gauc has a high (healthy) fat content and will keep your fillings rich like sour cream would. There are vegan sour cream alternatives like Kite Hill, I just haven’t had the chance to try them yet.

Vegan Crunchwrap Supreme

Layers upon layers of creamy, crunchy, flavorful goodness– this Vegan Crunchwrap Supreme is a crowd pleaser, whether you eat animal products or not.

Ingredients

  • 2 tortillas

  • 3 tablespoon guacamole

  • 1/2 cup fresh or frozen peppers

  • 1/4 cup vegan “meat” crumbles

  • 2 oz. vegan cheese

  • 4 tablespoon salsa

Directions

  • Take one of your tortillas and fold it in half twice. This will make it easier to cut about 1.5 inch off the edges, to create a circle slightly smaller than the original tortilla.
  • Spread guacamole and peppers on un-cut, larger tortilla.
  • Next, add mock meat or beans. If frozen mock meat or pre-cooked (canned) beans, they don’t need to be pre-heated. The air-fryer will sufficiently cook them.
  • Sprinkle vegan cheese on top. A less processed version of this recipe could use nutritional yeast instead.
  • Add salsa to taste. On top, place smaller tortilla in the center.
  • Fold the outer corners on 5-sides to create the shape seen in a Crunchwrap Supreme.
  • Place tortilla, folded side down, on Air Fryer. Set temperature to 400°. Cook for 2 to 3 minutes, or until tortillas are golden brown and crispy.
