Calling all dark chocolate lovers! This simple brownie recipe is a vegan version of brownies from a box mix: perfectly cake-like, sweet, and balanced. I use a ripe banana as a plant-based egg replacement, but otherwise this recipe is very similar to a traditional brownie recipe.

Even before I was vegan, I loved dark chocolate because it satisfies my sweet tooth but isn’t overwhelmingly sugar-y. Dark chocolate also has more antioxidants and caffeine than regular milk-based chocolate, so it’s a winner on all three counts.
Vegan Banana Dark Chocolate Brownies Recipe
Ingredients
- Brownie Ingredients
1 ripe banana, mashed
1.5 cups flour
1 cup sugar
3/4 cup chocolate chips
1/4 cup cocoa powder
1/4 cup dairy-free milk
1/4 cup melted vegan butter or oil
1.5 tablespoon ground flax + 3 tablespoon water
1 tablespoon baking powder
1/2 tablespoon salt
1 teaspoon vanilla
- Salted Dark Chocolate Icing Ingredients
2 dark chocolate bars
1/3 cup vegan butter
1/3 cup dairy-free milk
1/4 cup sugar
1 tablespoon vanilla
1/2 teaspoon salt
Directions
- Set oven to 350° F.
- Peel and mash ripe banana in a medium mixing bowl.
- Make flax egg by stirring 1.5 tablespoon ground flax and 3 tablespoons water in a small bowl. Let sit for at least 3 minutes to thicken.
- In a separate mixing bowl, combine flour, sugar, chocolate chips, cocoa powder, baking powder, and salt.
- Add flax egg, milk, butter/oil, and vanilla to mashed banana.
- Fold in dry ingredients to the batter, being sure not to over-mix.
- Transfer batter into 9 by 9 inch non-stick pan.
- Bake for 25-30 minutes, or until a toothpick comes out of the brownie without batter sticking (the chocolate chips will be melted and may get on the toothpick, but that isn’t what you’re looking for!).
- Let cool and prepare icing: bring all icing ingredients but the chocolate bars to a boil.
- Take pot off heat and stir in broken chocolate bar until the icing is smooth and shiny.
- Pour icing on brownies and serve once chocolate icing hardens (about 45 minutes).
