Queso made with…chickpeas?!? Yep, you read that right! These tacos were so quick to make, while the meat-less crumbles were cooking I combined and heated up my newest vegan queso recipe and topped with gauc.
Time: 15 minutes
Serves: 3-5 servings
Ingredients:
- 1 can chickpeas
- 1/2 cup nutritional yeast
- pinch of salt and pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/4 cup water (or aquafaba, the water from the canned chickpeas)
- 1 teaspoon hot sauce, or to taste
Directions:
- Blend dry ingredients in a food processor or blender until well-incorporated.
- Slowly add liquid, and pulse the mixture a few more times.
- In a medium-hot pan, stir until warmed. Add hot sauce if desired, and serve with chips or other items to dip.
