Chickpea Queso (Vegan + Gluten-Free)

Queso made with…chickpeas?!? Yep, you read that right! These tacos were so quick to make, while the meat-less crumbles were cooking I combined and heated up my newest vegan queso recipe and topped with gauc.

Time: 15 minutes

Serves: 3-5 servings

Ingredients:

  • 1 can chickpeas
  • 1/2 cup nutritional yeast
  • pinch of salt and pepper
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/4 cup water (or aquafaba, the water from the canned chickpeas)
  • 1 teaspoon hot sauce, or to taste

Directions:

  1. Blend dry ingredients in a food processor or blender until well-incorporated.
  2. Slowly add liquid, and pulse the mixture a few more times.
  3. In a medium-hot pan, stir until warmed. Add hot sauce if desired, and serve with chips or other items to dip.
