Ingredients:
- 1 package extra firm tofu
- 1/4 cup whole wheat flour
- 1/4 cup vital wheat gluten
- 1/4 cup cornstarch
- 4 teaspoon nutritional yeast
- 2 teaspoon seasoning of choice (I used Ms. Dash salt-free seasoning, but you could also use paprika, ranch, or chili powder)
- 2 tablespoon flaxseed meal (blended or ground flaxseed)
- 4.5 tablespoon water
- (optional) vegan butter)
Directions:
- Set oven to 425°. Line a baking sheet with parchment paper or reusable cover.
- Combine whole wheal flour, vital wheat gluten (the main ingredient in seitan, a versatile and protein-rich #MealPrep staple), nutritional yeast, and seasoning of choice in a medium bowl.
- Prepare flax egg (chia is another simple egg replacement) by combining flaxseed meal and water in a small bowl.
- While your “egg” set, tear tofu into bite-sized nuggets.
- Dredge tofu nugget in “egg” mixture. Then dip and sprinkle it in the powdered mixture.
- Once all your nuggets are arranged on a baking sheet, place in the oven for 20-30 minutes. Move them around and brush with butter to get them really crisped up.
