High-Protein Chocolate Chip Cookies

Chickpeas and protein powder provide tons of protein, but these cookies can pass for a typical dessert. Vegan and gluten-free, High-Protein Chocolate Chip Cookies are the perfect compliment to dairy-free milk!

Ingredients

  • 1 can chickpeas, drained

  • 2 scoops vegan protein power

  • 1/2 cup peanut butter

  • 1/2 cup brown sugar

  • 1 teaspoon salt

  • 4 tablespoons dairy-free milk

  • 1 tablespoon vanilla

  • 1/2 cup dark chocolate chips

Directions

  • Set oven to 350° F and line two cookie sheets with parchment paper.
  • Using a blender or fork, mix drained chickpeas until they have a smooth consistency.
  • In a separate bowl, combine protein powder, brown sugar, baking powder and salt.
  • Stir in mashed chickpeas, nut butter, dairy-free milk and vanilla.
  • Add chocolate chip cookies and set cookie dough in oven until the oven is heated.
  • Scoop and roll cookie dough into 1.5 tablespoon balls. Flatten them to desired cookie shape, as they won’t rise much while baking.
  • Place in the oven for 15 to 20 minutes.
