Ingredients
1 can chickpeas, drained
2 scoops vegan protein power
1/2 cup peanut butter
1/2 cup brown sugar
1 teaspoon salt
4 tablespoons dairy-free milk
1 tablespoon vanilla
1/2 cup dark chocolate chips
Directions
- Set oven to 350° F and line two cookie sheets with parchment paper.
- Using a blender or fork, mix drained chickpeas until they have a smooth consistency.
- In a separate bowl, combine protein powder, brown sugar, baking powder and salt.
- Stir in mashed chickpeas, nut butter, dairy-free milk and vanilla.
- Add chocolate chip cookies and set cookie dough in oven until the oven is heated.
- Scoop and roll cookie dough into 1.5 tablespoon balls. Flatten them to desired cookie shape, as they won’t rise much while baking.
- Place in the oven for 15 to 20 minutes.
