Starbucks has come a long way in offering vegan-friendly items. I remember when the only dairy-free milk they offered was soy, and it was several years until coconut milk was added to the menu. Thankfully the market demands from vegans and others who don’t drink dairy has led to recent changes. Now there’s even a vegan bento box!

Starbucks’ Brown Sugar Oat Shaken Espresso came to US stores on March 2, 2021, which is also when they added oat milk to their dairy-free milk offerings. Oh happy day! I love this drink, and thought it’d be a fun challenge to make it at home.

My recreation of their Brown Sugar Oat Shaken Espresso drink combines Blonde espresso, brown sugar, and cinnamon syrup with oat milk for a dairy-free drink that is sweet yet refreshing. I love it because it doesn’t have complicated ingredients or steps, but doesn’t sacrifice taste for simplicity. If you love Starbucks but want to save money, this “at home” recipe is for you!

Ingredients

  • Shaken Espresso ingredients
  • double shot blonde espresso (or other strong coffee)

  • 2/3 cup oat milk

  • half tray ice cubes

  • Brown Sugar Syrup ingredients
  • 4 tablespoon brown sugar

  • 3 tablespoon water

  • 1 teaspoon vanilla

  • 1/2 teaspoon cinnamon

  • Brown Sugar Cinnamon Topping ingredients
  • 1/2 cup brown sugar

  • 2 tablespoon cinnamon

Directions

  • Brew blonde espresso. If you prefer, use regular espresso, or even cold brew coffee.
  • While the espresso cools, prepare brown sugar syrup by simmering water, brown sugar, vanilla, and cinnamon on low heat for 5 minutes.
  • Make brown sugar topping by combining brown sugar and cinnamon. Place in a clean spice bottle or airtight container.
  • Add syrup to cooled coffee and add ice to the top of your coffee cup. Stir or shake well.
  • Pour oat milk into shaken espresso.
  • Shake brown sugar cinnamon topping over your drink, and enjoy!

Recipe notes:

  • If you don’t want to make your own simple syrup. Torani makes a brown sugar cinnamon syrup that tastes exactly like what they put in the Starbucks drink. Or just use traditional simple syrup and add cinnamon to shake in with the espresso.
  • I highly recommend using a mason jar in this recipe, because it doubles as a shaker and cute drinkware.
