Vegan Holiday Cookie Roundup

Classic chocolate chip, gingerbread, snickerdoodle…with so many decadent cookies, why choose just one? Whether you’re sharing with loved ones or saving them for yourself, I hope this roundup of vegan cookie recipes inspires you for the holidays!

December 4th is National Cookie Day, but I think it should be celebrated the whole month of December! Baking cookies is basically my love language: I find it so relaxing and satisfying. Baking cookies makes the whole house smell and feel cozy, and is a chance to share whatever I make with someone to let them know I’m thinking of them. Of course, I always save a few in case the urge to have dessert strikes– it always does.

Normally I would be baking lots of cookies for parties, platters, and to have in case friends stop by. As you can see from the picture above, my family takes desserts seriously. Obviously, things will be very different this year due to COVID; I’m still planning on making a variety of cookies. To cut down on waste, I may halve recipes, or freeze it to have pre-made dough on hand.

Vegan Sugar Sprinkle Cookies

This cookie recipe is one of my favorites, because it’s basic and a crowd favorite. You can get creative– cut it in a fun shape, add in sprinkles or top with icing!

Vegan Brown Butter Cinnamon Spice Cookies

The time and effort involved in browning butter is worth it, trust me. What is brown butter? By heating it low and slow, you get a nutty, caramel-like flavor that is the perfect addition to these sweet and cinnamon-y cookies.

Lemon Glazed Gingerbread Cookies

Warning: This recipe makes a lot of cookies. Good thing they aren’t too sweet and disappear quickly! Lemon is an unexpected flavor around Christmastime, but it complements ginger and molasses so well.

Vegan Salted Chocolate Chip Cookies

The ideal chocolate chip cookies is flaky on the outside, soft and chewy on the inside. Check, check, and check. Flax eggs are the secret to binding everything together, and the seat salt and 50:50 mix of brown and coconut sugar keep things fresh.

Vegan Gluten-Free Pumpkin Snickerdoodle Cookies

No trip to the grocery store required to make these cookies– the ingredients are probably already in your pantry. Canned pumpkin, chickpea brine (aquafaba) and seasonal, warm spices come together for an easy and gluten-free treat.

Homemade Vegan Samoas Cookies

Just because the original Girl Scout’s Samoas/Caramel DeLites aren’t vegan doesn’t mean you have to live without them! It’s rich layers and iconic ring shape is so delicious and fun. These cookies have a basic biscuit cookie that could be made with the aforementioned Sugar Sprinkle Cookies recipe.

While I’ll probably make all of these cookies (and more) at some point this month, I think the Brown Butter Cinnamon Spice Cookies are my new go-to. What’s your favorite cookie?
