Vegan Purple Tzatziki Sauce

Vegan Purple Tzatziki Sauce is full of zippy flavors and fun color. I think it goes just as well with Mediterrian dishes like falafel or a spicy lentil salad as it does french fries! In only a few minutes, you can have this purple potato-powdered sauce ready to use for  meals and snacks throughout the week.

What is tzatziki?

Tzatziki is Greek dish traditionally made with Greek yogurt, cucumbers, and various spices. It can be used as a dip, dressing or garnish.


How can I make tzatziki vegan?

To mimic the creaminess of yogurt, this recipe uses soaked cashews. You can soak your cashews in water overnight, or cover them with hot water and let them sit for about 20 minutes. The cashews provide a base texture that is similar to traditional tzatziki. 


Do I need to use purple sweet potato powder?

Suncore sweet potato powder doesn’t impact the flavor, it’s there to add a pop of color. Feel free to omit it!

Ingredients

  • 1 cup cashews (soaked)

  • 1 cup cucumber (peeled and grated)

  • 1/4 cup water or unsweetened dairy-free milk

  • 4 cloves garlic

  • 2.5 tablespoon nutritional rest

  • 2 tablespoon Suncore purple potato powder (optional)

  • 1.5 tablespoon chopped dill

  • 1 tablespoon lemon juice

  • 2 teaspoon sea salt

  • pinch black pepper

Directions

  • Soak cashews overnight or place in hot water for at least 20 minutes.
  • Drain cashews and place in a food processor with cucumber, liquid, and all other ingredients.
  • Pulse until a thick, smooth consistency is reached.
  • Serve immediately or store in the fridge with a mason jar or other sealed container.
