It’s no secret that I love coffee (and I have plenty of vegan recipes to prove it), but it’s not the only caffeine game in town! I’ve recently been loving all things matcha, from iced matcha lattes to this matcha-inspired dessert.
What is matcha?
Matcha refers to a powder made from young green tea leaves. Matcha powder gives a bright green color to whatever it is used in because it it is highly concentrated- the leaves are ground into a fine powder rather than steeped in water like most tea leaves.
Where can I find matcha powder?
High-quality matcha is easy to find if you know where to look. First, I recommend checking out your local Asian food mart. They tend to sell matcha powder towards the front of the store or in the same aisle as loose leaf tea and other drink essentials. On the topic of tea, tea shops are another great place to find matcha locally.

These cookies require only 8 ingredients, and are a fun way to add matcha’s color and flavor to a basic sugar cookie. You’ll need:
- flour regular white works best, but you could also substitute for gluten-free flour and not need to modify the recipe
- cane sugar this lends the cookies sweetness, chewy texture, and literally sparkle. You can use regular granulated sugar, but note the cookies will spread more and likely not stay the same light green color as they bake
- egg replacement use pre-made egg replacement powder like the foolproof one by Bob’s Red Mill, or make your own flax egg
- vanilla for a hint of sweetness
- baking powder to make your cookies rise
- salt a little more than a pinch

Vegan Matcha Sugar Cookies

Ingredients
1 cup (136 grams) flour
1 cup cane sugar (this is a must if you want your Cookes to look really “sparkly”)
1/2 cup unsalted vegan butter, cold
2 tablespoon matcha powder
1 egg replacement (or use my recipe for a flax egg)
1/2 tablespoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
Directions
- Cut butter into half-inch squares and place in mixing bowl.
- Add 1/2 cup sugar and matcha powder, and mix with an electric mixer or fork until creamed.
- Make egg replacement according to package instructions, or a flax egg if you don’t have one.
- Pour flax egg and vanilla into wet ingredients and mix together well.
- Add dry ingredients (flour, baking powder, salt) to wet ingredients, and mix until just combined– overmixing will lead to drier, tougher cookies.
- Place dough in fridge to chill for for at least 30 minutes.
- Preheat oven to 350° F.
- Scoop about 1 tablespoons worth of dough to form your cookies.
- Put remaining sugar in a small bowl. Dip cookies in, then place them sugar-side facing up a lined baking sheet.
- Bake cookies for 10-12 minutes, just before the edges of the cookies really crisp and darken. It can be harder to see when these cookies burn due to their color, so keep your eye on them!
- Let cookies cool for at least 7 minutes, then enjoy! Store what you don’t eat immediately in an airtight container on your kitchen counter for up to 5 days.
